Heading home in a couple weeks. I have my reasons to head back home and I just think that it’ll be better for me in the long run. So.. I’m looking real forward to seeing everyone, especially my kids! I miss Charles and Sophie so much.
So today for lunch I made a tomato cream soup which was REALLY good. I normally don’t like to congratulate myself on my cooking but it was great. Also, I don’t usually eat my own food after cooking, but I tore that shit up lol. Entree’s included spaeztle with vegetables and beef and onions in oyster cream sauce over pasta.
I finished writing my menu.. actually almost finished. I sent it out to a couple of my friends to see if I should change anything. Trying to get a tasting going when I get back to promote my stuff. Menu will be posted up for everyone to see soon. Then everyone can tell me what they think yeah? =]
Tomato Cream Soup
6 tomates roughly chopped, 2 onions roughly chopped, 2 carrots roughly chopped, 1 bunch basil, 5 cloves garlic, chicken stock, cream, salt, pepper, sugar to taste, olive oil.
start with the olive oil in the pot. throw in the onions and carrots and garlic, salt and pepper. sweat it out then toss in the tomatos and basil. cook for 5mins. throw in chicken stock and bring to a boil, then let it simmer. toss in cream and blend. adjust flavor with sugar salt and pepper. you can pass it through a chinois for a finer soup.
